Diabetic casseroles, chili, soups & stews

I used to make a lot of casseroles, soups and stews, and found that its usually a very complete meals and usually fills me up quickly.  Usually never made chili but looking at it as an alternative for vegetarian recipes for the family.  They are also great to make in bulk and freeze left overs for days that we don't want to cook.  Plus, it helps keep us away from ordering food and relying on packaged foods which has lots of preservatives, high in sugar and fats.
